It is hard out there for a food truck. You got to watch out for the parking nazis, the cops, little tuner cars cutting you off, mechanical breakdowns, surprise health department inspections, other food trucks, pray for decent parking, dodge security at the location, move locations at a drop of a hat and 99 other problems and a brick ain't one.
Alex Chu, owner of Dim Sum Truck, was cool enough to let me ride along as I shadowed him in the day-in-a-life of a food truck hustler. I was embedded with the Dim Sum Truck and lived first hand the trials and tribulations of running a mobile restaurant.
Let me tell you, it's not easy. There is a whole lot that happens before any food truck lands and starts to serve the hungry public and even more that goes on afterwards.
